The Premise
What do high falutin' flours made from organic sprouted grains add to real bread? And what about black barley? Buckwheat?We aim to find out over the next 7 weeks.
Oh, and according to the interwebs, sprouting helps increase the amount and availability of certain nutrients. Breads made from sprouted whole grains are high in fiber, vitamins, and minerals, and may have less of an impact on blood sugar than typical breads.

Week 3: House-milled buckwheat flour (~10%) plus sprouted buckwheat groats!
Did you know that buckwheat is not really wheat? It's not even related, as the seeds don't come from a grass. Buckwheat is a highly nutritious whole grain that many people consider to be a superfood. Among its health benefits, buckwheat may improve heart health, promote weight loss, and help manage diabetes. Buckwheat is a good source of protein, fiber, and energy.

A non-GMO product, this grain, also known as "purple barley," has a superior nutritional profile that is high in anthocyanin (antioxidants).
